  • 1 cup cream cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • tbsp Olive oil for cooking

Stuffing & Cooking
  1. Cut a pocket in each chicken breast and stuff generously with the spinach mixture.
  2. Seal the pockets with toothpicks if necessary, then season the outside with salt and pepper.
  3. Sear the chicken in a hot skillet with olive oil for about 2-3 minutes on each side.
  4. Transfer to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.

Notes

Leftovers can be stored in the fridge for about 3-4 days. Try adding sun-dried tomatoes for a spicy kick or substitute with Greek yogurt for a lower-calorie option.
