Main Ingredients
  • 1 whole whole chicken
  • 2 tablespoons soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon five-spice powder
  • 4 cloves garlic, minced
  • 1 inch ginger, sliced
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • Fresh herbs for garnish (optional) Use cilantro or parsley for garnish.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine soy sauce, Shaoxing wine, five-spice powder, garlic, ginger, salt, and sugar. Stir well.
  3. Rub the mixture all over the chicken, especially under the skin.
Cooking
  1. Heat vegetable oil in a large oven-safe skillet over medium-high heat. Brown the chicken on all sides.
  2. Transfer the skillet to the oven and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C).
Serving
  1. Let the chicken rest for 10 minutes before carving. Garnish with fresh herbs if desired.

Notes

For best results, let the chicken marinate for an hour or two before cooking. You may also swap sugar for honey for a different sweet touch. Consider adding citrus zest or chili flakes for extra flavor.
