Ingredients

For the chicken
  • 1.5 lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 T olive oil
  • 2 cloves garlic, minced
  • 1/3 c grated Parmesan
  • 1/3 c breadcrumbs (Italian or plain—add 1 tsp Italian seasoning to plain breadcrumbs)
  • 1/2 tsp cracked pepper
  • 1/2 – 3/4 tsp sea salt
For the potatoes
  • 2 lb red potatoes, cut into bite-sized pieces
  • 1 – 2 cloves garlic, minced (for potatoes)
  • 2 T olive oil (for potatoes)
  • 2 T grated Parmesan (for potatoes)
For the green beans
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil (for green beans)
  • 1 clove garlic, minced (for green beans)
  • 1 T Parmesan (optional, for green beans)

Method

Preparation
  1. Preheat your oven to 425°F. Line a sheet pan with parchment or spray it with cooking oil.
  2. In a medium bowl, toss all potato ingredients together. Spread the potatoes on 1/3 of the pan and bake for 10-15 minutes.
  3. While the potatoes are baking, toss all chicken ingredients together in the same bowl.
  4. After the potatoes have cooked, add the chicken to the pan.
  5. Toss the green beans with their ingredients and set aside.
Cooking
  1. After 25 minutes, ensure the chicken reaches an internal temperature of 165°F. For crispy potatoes, broil on high for 4-5 more minutes if desired.
  2. Remove from the oven, cool for a few minutes, and serve!

Notes

Double the recipe if you’re feeding a crowd. For extra crunch, broil the chicken for a few minutes at the end. You can mix in your favorite veggies like bell peppers or zucchini for extra flavor.
