Ingredients

Main Ingredients
  • 1 pack (13oz) Cajun andouille sausage, cut into coins
  • 1 tbsp chopped garlic
  • 1 can (14.5oz) chicken broth (about 2 cups)
  • ½ cup heavy cream
  • 1 can (10oz) Rotel diced tomatoes and chilies
  • 8 ounces dry bowtie pasta (½ pound or approximately 2 cups)
  • 2 cups shredded cheddar cheese
  • 1 tsp cajun seasoning

Method

Cooking
  1. In a large skillet, cook the sausage over medium heat for about 5 minutes or until browned. Remove the sausage and set aside.
  2. In the same skillet, sauté the garlic in the leftover grease for about a minute.
  3. Pour in the chicken broth, diced tomatoes, heavy cream, and cajun seasoning; stir well.
  4. Toss in the dry pasta, cover with a lid, and simmer on LOW for about 14 minutes.
  5. Once the pasta is cooked, add the cooked sausage and shredded cheddar cheese; stir to combine and enjoy!

Notes

Serve straight from the skillet topped with fresh parsley and a squeeze of lemon. Leftovers can be stored in an airtight container in the fridge for about 3-4 days or frozen for up to a month. To reheat, add a splash of chicken broth or cream.
