  • 2 tsp Swerve Confectioner’s Sugar Substitute
  • 1 tbsp Horseradish Sauce
  • 1 pinch Paprika Can add red pepper flakes for extra spice.

  2. Arrange the cheese into 8 circles on a parchment-lined baking sheet. You may need to use two separate sheets.
  3. Bake for 6-8 minutes until the edges start to brown and crisp.
Mixing Sauce
  1. While the cheese is baking, mix the mayonnaise, Worcestershire sauce, ketchup, sugar substitute, horseradish sauce, and paprika together.
Assembly
  1. Remove the cheese circles from the oven and let them cool for 1 minute.
  2. Top each circle with slices of corned beef, a spoonful of sauerkraut, and a drizzle of the dressing.
  3. Quickly fold the cheese circles over the filling before they harden.
  4. Allow the roll-ups to cool and crisp up before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster oven or air fryer for maximum crispiness. For vegan options, substitute corned beef with marinated tempeh or mushrooms and use dairy-free cheese.
