Ingredients

Main ingredients
  • 1 deep-dish deep-dish pie crust Store-bought or homemade
  • 2 pieces yellow onions, sliced Caramelize for enhanced flavor
  • 2 tbsp butter For sautéing onions
  • 8 slices bacon Cooked and chopped
  • 8 large eggs Fresh eggs for best flavor
  • 1.5 cups heavy cream or half-and-half Substitute with milk for a lighter option
  • to taste none Salt and pepper For seasoning
  • 2 cups grated sharp cheddar cheese Or substitute with pepper jack or feta for variation

Method

Preparation
  1. In a skillet, cook onions in butter over low heat until golden, about 20 minutes. Let them cool.
  2. Cook bacon until chewy, chop it into big pieces, and allow to cool.
  3. Preheat oven to 400°F.
  4. Roll out the pie crust into a deep pie pan.
  5. Whisk together eggs, cream, salt, and pepper. Stir in the cooled onions, bacon, and cheese.
  6. Pour the filling into the crust. Cover with foil and bake for 40–45 minutes.
  7. Remove the foil and bake for an additional 10–15 minutes until set.
  8. Allow to rest for 10–15 minutes before slicing.

Notes

Serve warm with a side of fresh greens dressed lightly with olive oil and lemon. Improves in flavor if allowed to rest before slicing.
