Ingredients

Main Ingredients
  • 1 can cannellini beans, drained and rinsed
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • to taste Salt and pepper
  • 2 tablespoons balsamic vinegar

Method

Cooking
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.
  3. Add the minced garlic and thyme to the skillet; cook for about 1 minute until fragrant.
  4. Stir in the cannellini beans and gently toss to combine. Cook for 5-7 minutes until the beans are heated through.
  5. Add balsamic vinegar and stir to coat the beans.
  6. Season with salt and pepper to taste. Serve warm as a side dish or over toast.

Notes

For extra sweetness, add a pinch of sugar while caramelizing the onions. Fresh herbs like rosemary or oregano can substitute thyme for different flavors. Mix different beans for varied texture.
